S'mores Cups

S'mores Cups (makes 24)  are easy to make is a couple of steps.  

You will need:

  • A mini muffin pan
  • A dow or teaspoon to make a 'dent' in the cookies

Ingredients

  • 1 cup graham cracker crumbs
  • 1 1/2 cups of flour
  • 1/2 teaspoon baking soda
  • 1/4 salt (optional)
  • 1 stick butter, softened
  • 1/2 cup + 1 tablespoon brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 12 large marshmallows, cut in half
  • 24 pieces of chocolate bar

Directions

  • Preheat oven to 350*
  • Spray mini muffin pan with cooking spray
  • In a bowl: mix the graham cracker crumbs, flour, baking soda and salt - then set aside
  • In a larger bowl, with a hand-held mixer: blend the butter, brown sugar, and sugar until cream
        • Add in the Egg and vanilla, then mix well
  • Mix the dry ingredients in with the wet ingredients, mix on low until combined.  Dough will be crumbly
  • Scoop the dough into the muffin tun.  Fill them full and press down slightly so the dough is even on top
  • Bake for 8 minutes (they will look not done but they are)
  • Immediately after baking use the dowl or teaspoon and dent the dough to make a 'cup' shape and place 1/2 a marshmallow in the dent (sticky side down)
  • Let cool for 25minutes
  • Place a piece of chocolate on each marshmallow
  • Broil for 1-2 minutes until marshmallow is toasty
  • Let cool for 10-15minutes then eat!
