S'mores Cups (makes 24) are easy to make is a couple of steps.
You will need:
- A mini muffin pan
- A dow or teaspoon to make a 'dent' in the cookies
Ingredients
- 1 cup graham cracker crumbs
- 1 1/2 cups of flour
- 1/2 teaspoon baking soda
- 1/4 salt (optional)
- 1 stick butter, softened
- 1/2 cup + 1 tablespoon brown sugar
- 1/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 12 large marshmallows, cut in half
- 24 pieces of chocolate bar
Directions
- Preheat oven to 350*
- Spray mini muffin pan with cooking spray
- In a bowl: mix the graham cracker crumbs, flour, baking soda and salt - then set aside
- In a larger bowl, with a hand-held mixer: blend the butter, brown sugar, and sugar until cream
- Add in the Egg and vanilla, then mix well
- Mix the dry ingredients in with the wet ingredients, mix on low until combined. Dough will be crumbly
- Scoop the dough into the muffin tun. Fill them full and press down slightly so the dough is even on top
- Bake for 8 minutes (they will look not done but they are)
- Immediately after baking use the dowl or teaspoon and dent the dough to make a 'cup' shape and place 1/2 a marshmallow in the dent (sticky side down)
- Let cool for 25minutes
- Place a piece of chocolate on each marshmallow
- Broil for 1-2 minutes until marshmallow is toasty
- Let cool for 10-15minutes then eat!
